on homemade waffles and weekends away
hello!
how are things?
i’m writing to talk of weekends away —
the kind that get you
in the bottom of your soul.
the kind that remind you to laugh,
that remind you to eat good food,
and to do so among friends.
i’m also writing to tell you of a recipe for waffles.
it’s nothing fancy,
just my simple go to, but it’s a good one.
plain and simple
weekend waffles.

ps:
i make mine with soured milk,
but buttermilk should do fine as well.
Weekend Waffles
145 grams all purpose flour
2 grams baking soda
4 grams baking powder
15 grams white sugar
a pinch of salt
35 grams unsalted butter, melted
250 mL milk + the juice of 1/2 a lemon
1/2 vanilla bean, scraped
1 egg
Preheat your waffle iron.
In a medium-sized bowl combine the dry ingredients and set aside.
In a separate bowl whisk together the milk and lemon juice and then the egg, vanilla and melted butter.
Pour the egg mixture into the dry and whisk until combined.
Coat the waffle iron with cooking spray (or melted butter).
Cover about 1/3 with batter and cook until the waffle is golden and crisp and no longer steaming.
Rest on a wire rack. Serve with unsalted butter and pure maple syrup. (I have this one)

we just started having waffles here, when a weekend guest asked for some, i was surprised by how much i like making them and now they have become are regular staple in which i love experimenting. so i will try this recipe.
what an inspirational blog you have and your pieces, well they are stunning.
In Norway, we use sour cream in our waffles – have you tried this? We eat these waffles with jam and/ or brown goat cheese, a Norwegian speciality which is sweet and sticky.

I like to make a batch to put in the freezer for a quick breakfast, these sound great. Also want to try the sour cream idea too….thanks
Nikole, I haven’t got a recipe as such, my waffles are always stunt projects – but I start with whisking together eggs, sugar, then the sour cream (maybe two or three eggs and a cup of sour cream) and continue with flour and milk until I get a nice batter =)
